Thanksgiving Recipe Ideas!

 

Our Maine Mousse is so versatile!  It is delicious just as it is... on toast or bagels or in tea.  But we also use it regularly in our cooking...  These ideas take no time at all and your guest will love them...

Before the Meal.....

Blueberry Lemon or Cranberry Orange Gin Martini

It couldn't get much simpler!  Add 2 t of Blueberry Lemon or Cranberry Orange Maine Mousse to the gin in your shaker and shake, shake, shake until the honey dissolves.  Adjust the amount of honey to your taste!  We had this drink at at friends' house and were blown away by how delicious it was. 

At the Dinner Table....

Honey Pepper Turkey with Apple Cider Glaze 

Here at Barters Island Bees, we like to roast our turkey with a coating mixture of salted butter, black pepper and a touch of our Barters Island Bees raw honey.  We smear the mixture all over the turkey and cover it with foil to keep the butter from browning too quickly. We remove the foil the last 15-30 minutes of roasting.  The ingredients are:  a stick of softened butter, 1/4 c honey and 2 T of pepper (or to your taste.  We start our turkey in a very hot oven (475 degrees) and immediately reduce the temperature to 325 degrees until it is just done on a digital thermometer.  

For the glaze, in a medium saucepan, slowly cook a large onion in 3 T butter until very tender but not browned.  Stir in 3 T flour, 1 1/2 c chicken stock,  1 c cider, 1/2 honey and 2 T cider vinegar.  Stir until the sauce is bubbling. You can use the immersion blender to smooth it out.  Season with salt and pepper and serve over sliced turkey.  

Ginger Glazed  Squash or Ginger Mashed Sweet Potatoes

Prepare your squash to roast.  Coat it with olive oil or butter and roast until done.  Remove from the oven and coat it with a glaze of Gentle Ginger Maine Mousse (You can also use Cinnamon or Pumpkin Spice).  If you are using sweet potatoes (my favorite) cook and drain them, add butter and Ginger Maine Mousse to taste and mash until fluffy. 

Not Your Mama's Cranberry Sauce 

For an extra special cranberry sauce that your guests will love, add some Bee Stinger to your sauce.  It will liven up the dish so that it will be delicious with your turkey.

 Honey Butter

Mix 2 tablespoons of honey into a softened stick of butter.  (You can also use any flavor of Maine Mousse).  Serve with hot rolls or bread.
